COFFEE SMOOTHIE

Ingredients:

½ cup (125 mL) cold brew coffee

¼ cup (60mL) almond milk

1 Tbsp. (15mL) almond butter

1 Tbsp. (15mL) honey

2 Tbsp. (30 mL) rolled oats

¼ tsp. (1 mL) cocoa powder

1 banana quartered

DENVER OMELET

Ingredients:

1 tbsp (15 mL) butter, divided

2 tbsp. (30 mL) finely chopped onion

2 tbsp. (30 mL) finely chopped red bell pepper

2 tbsp. (30 mL) finely chopped green bell pepper

3 tbsp. (45 mL) diced ham

2 eggs

1 tbsp. (15mL) water

⅛ tsp. (0.5 mL) salt

POMEGRANATE- GINGER COOLER

Ingredients:

ARTICHOKE-BACON BITES

Ingredients:

24 authentic restaurant-style tortilla chips

1 can (14 oz or 398 mL) artichoke hearts in water, drained

SPEEDY SHRIMP AND SAUSAGE PAELLA

Ingredients:

1 medium onion

8 oz. (250 g) smoked Polish sausage

1 tbsp. (15 mL) olive oil

1 can (14.5 oz) chicken broth (about 2 cups/500 mL)

1 cup (250 mL) uncooked long grain white rice

1 tbsp. (15 mL) Creole seasoning

2 garlic cloves, pressed

1/2 tsp. (2 mL) turmeric

1 lb. (450 g) medium uncooked shrimp (41-50 per pound), peeled and deveined, tails removed

1 can (14.5 ounces) petite diced tomatoes with green chiles (1 3/4 cups/425 mL), drained

1 pkg. (9 oz) frozen artichoke hearts, thawed (1 1/2 cups/375 mL)

POWER KALE SALAD

Lightened-up Caesar Dressing
