This month, we’re featuring the perfect summer salad, Blueberry Cucumber Summer Salad with Creamy Balsamic Vinaigrette.
Nothing says summer like blueberries and cucumbers paired with a fresh balsamic vinaigrette. Sweet blueberries, candied almonds, and honey are a delicious contrast to green onions, balsamic vinegar, and garlic. The fresh crispy cucumbers and salad greens tie it all together.

It’s a great salad for lunch. You can serve it as a side salad with dinner or add beans, chicken, or tofu and make it a hearty meal.
The salad is easy to assemble. Making the sugared almonds takes the most time, but it’s really worth standing by the stove for the entire eight minutes and stirring, so the sugar does not burn.
I made a couple of changes to the recipe. I ran out of Persian cucumbers, so I used a seedless English cucumber instead. For the Balsamic vinaigrette, I used a vanilla dairy-free coconut milk yogurt alternative instead of heavy cream and honey.
I will definitely make this again.
