Our salad for March 2023 is Spring Pea, Asparagus, and Mint Salad. I selected it especially because it reminds me of spring.

It has simple ingredients, takes under 15 minutes to prepare and requires little more than the ability to boil water and chop a few vegetables.
The only change I made to the recipe was I used snow peas in place of regular pea pods. The results were tasty and I think the shape of the snow peas added to the aesthetics of the prepared dish.
