March 2023 in The Twelve Months of Salad by Fran Joyce

Our salad for March 2023 is Spring Pea, Asparagus, and Mint Salad. I selected it especially because it reminds me of spring.

What screams spring more than shades of bright green and the aroma of fresh mint?

This is also a healthy recipe filled with foods linked to heart health and cancer prevention. When you follow the link, https://www.aicr.org/cancer-prevention/recipes/spring-pea-asparagus-and-mint-salad/, you will find nutrition facts about this recipe.

It has simple ingredients, takes under 15 minutes to prepare and requires little more than the ability to boil water and chop a few vegetables.

The only change I made to the recipe was I used snow peas in place of regular pea pods. The results were tasty and I think the shape of the snow peas added to the aesthetics of the prepared dish.

It’s definitely one I will make again. There are many healthy and colorful recipes from the American Institute for Cancer Research. Check it out!

Next month, our April 2023 Salad will be Spring Salad with Edamame, Cucumbers, Snow Peas, and Tofu Croutons.
